February is Heart Health month. Below are a couple recipes from Dean Ornish MD, a man widely known for his lifestyle-driven approach to the control of coronary artery disease. Dr. Ornish and colleagues have shown that a lifestyle regimen featuring Yoga, meditation, a low-fat vegetarian diet, smoking cessation, and regular exercise could not only stop the progression of coronary artery disease, but could actually reverse it. Garbanzo Stew
4 cups vegetable stock
1 cup dried garbanzo beans (chickpeas), soaked overnight
1 cup diced onion
1 cup diced tomatoes
1 Tbs. minced fresh gingerroot
2 tsp. coriander
1 tsp. minced garlic
1/4 tsp. ground cumin
Freshly ground black pepper
1 tsp. fresh lime juice
1 Tbs. chopped fresh parsley
Directions:
In a large saucepain, combine the stock and garbanzo beans. Bring to a boil, reduce heat, simmer and cover for 1 hr. or until tender. Drain, reserving 1 cup of the cooking liquid. In a large saucepan, combine the cooked garbanzos, reserved liquid, onion, tomato, ginger, coriander, garlic and cumin. Bring to a boil. Reduce the heat and simmer, covered for 20 min. Season to taste with pepper. Garnish with lime juice and chopped parsley. Serves 4.
Dean’s Carrot Cake
1 tsp. ground cinnamon
1 tsp. ground allspice
1/2 tsp. freshly grated nutmeg
1/4 tsp. ground cloves
1.5 cups spelt flour
1/3 cup rice or oat bran
1.5 tsp. baking powder
1 tsp. baking soda
1 cup grated carrots
1 cup raisins or other dried fruit
3/4 cup raw honey
1.5 cups water
Directions:
Preheat the oven to 350 degrees F. Combine all the dry ingredients and mix well. In a separate bowl, combine the liquid ingredients. Fold the dry ingredients into the wet ones and mix well. Do not overbeat or mix. Pour into a non-stick 9x5x3 inch loaf pan. Bake for 1 hours and 15 minutes or until a toothpick comes out clean.
